以前我超怕煎魚,尤其是虱目魚肚,它那豐富的油脂會給你噴得到處都是
必需得拿著鍋蓋護身,以免被熱油燙到!

所以採買已去完刺的虱目魚肚,才能一口接一口得享受美味!

❶準備材料
- 虱目魚肚一片
- 鹽
- 胡椒粉

選擇無毒養殖認證虱目魚,是獨立真空包裝
要料理前一天先把冷凍的虱目魚肚移至冷藏
或是冷凍放進常溫水沖浸15分鐘

我故意挑選不要太大片的魚肚,才不會超過氣炸鍋籃的尺寸

虱目魚肚稍微用清水洗後,用紙巾將表面水份吸乾

在魚肚兩面皆塗抹上鹽巴,再靜置10分鐘

❹試吃心得
魚皮表面金黃酥脆,魚肉肉質軟嫩鮮甜
不用多餘的調味,只有灑胡椒粉和檸檬汁提味,
就讓人慾罷不能,筷子停不下來,真是美味極了!
這份虱目魚肚,沒多久就被我一個人KO了^^
